Our Story
A longtime veteran of the United State’s culinary scene, Chef Todd Davies brings the ideal blend of passion, knowledge and enthusiasm to every project he touches His experience in food and wine environments and love of wine country, along with his passion for creating works of art with his hands naturally progressed to Tam Gourmet's rustic, refined, elegant and sustainable offerings.
A native of Boise, Idaho, Davies graduated from the renowned Culinary Institute of America in Hyde Park, New York. He joined Charlie Palmer and David Burke for his first serious culinary position at The River Café in New York before moving to La Truffe in Philadelphia, PA. He came west in 1993 as Executive Chef for the Flying Saucer in San Francisco. After this, he joined Jeremiah Tower to open two restaurants, Stars Palo Alto and J.T.s in San Francisco, in addition to working at the original Stars in San Francisco.
In 1996 Davies became Partner/Executive Chef at Bradley Ogden’s Lark Creek Inn, where he was named by the San Francisco Examiner as one of the “Bay Area’s Top Ten Up-and-Coming Chefs.”
Involvement in wineries led Davies to explore creating beautiful charcuterie boards out of wine barrels and is now one of the central cores of Tam Gourmet.
Davies searches out the best wine barrels for his oak charcuterie boards, ones that are going to tell a story about the importance they play in the wine industry and aging of wine. In his travels, he is always on the lookout for cool and unique items that fit into his rustic yet refined style, especially items that can be implemented into culinary masterpieces or talked about alongside culinary masterpieces.
Additionally, the beauty of different sustainable woods from around the world are joined together for charcuterie boards, wood trays and cutting boards. The combination of different species of woods make for mesmerizing show pieces at home in rustic and sophisticated environments and everywhere in between.
All of the offerings at Tam Gourmet have significance in Todd's Life, whether they be black slate coasters, which convey meaningful messages learned along the way, or sports related items due to his daughter's love of all sports, especially the Golden State Warriors
Todd lives in Northern California with his wife, a school teacher and their daughter.
